




The brigasque ewe is a breed of sheep bred in the Southern Alps, mainly in the Alpes-Maritimes, originating in the Roya valley and more specifically in the village of La Brigue, from which it takes its name.
In the 21st century, 70% of the brigasque herd transhutes into the Mercantour National Park, and its breeding is favoured by the park authorities, but it has to cohabit with the wolf. Many farmers breed brigasques in association with goats or other breeds of dairy sheep. Céline and Georges breed this dairy breed, which produces a cheese called tomme. Its pressed paste is not formed in a mould, but in a cloth, giving it a cushion shape, known locally as sole.
